Ingredients

  • cup cocoa powder
  • ½ cup granulated sugar
  • 3 cups heavy whipping cream, divided
  • 1 package chewy brownie mix. ( or make your own) 9 x 13 pan
  • 1 tub Cool Whip (Optional)
  • ¾ cup chopped pecans (Optional)
  • ½ package chocolate covered toffee bits (Heath or other)

Instructions

Prep:

  • To make mousse: Mix ⅓ cup cocoa powder, and ½ cup granulated sugar into 1½ cups of the heavy whipping cream. Refrigerate for 1-2 hours, or so, while you make and cool brownies.

Bake:

  • In a 9 x 13 pan, bake 1 package chewy brownie mix. ( or make your own). Cool and crumble, or cut into ½ inch squares. Yes, there is plenty for everyone to have a snitch or two. :)

More Prep:

  • Whip the rest (1½ cups) of the heavy whipping cream with a couple tablespoons of granulated sugar, until stiff peaks appear. You can optionally use a 1 tub Cool Whip instead of the whipped cream.
  • To finish mousse, remove from fridge and whip until stiff peaks form.

To Assemble:

  • Layer ½ of brownie pieces into a large glass serving bowl or trifle bowl. A bowl works fine, just not as pretty! On top of brownies, layer ½ of the mousse, ½ of the whipped cream (or Cool Whip), a nice hearty sprinkle of toffee bits, and ½ of the chopped pecans (optional).
Repeat layers so you end with the toffee bits and pecans on top.
  • Refrigerate, if possible. It's actually better if you eat it the next day, but of course, it's luscious right now also!
  • Enjoy!
